Whipped Sweet Potatoes

   Monday October 3, 2016 - Whipped Sweet Potatoes - You're Gonna Love It!!
   Sweet Potatoes (Medium to Large)
   Light Brown Sugar
1. Cut the ends off of each sweet potato
2. Peel a little more than half of the skin from the potato
3. Cut the potatoes into quarters trying to keep the pieces equal in size
4. Place the potato sections into a large stock pot and fill with water so that they are covered
5. Put the stock pot on a burner, cover, and set to high and bring to a boil
6. Once boiling, lower the hear to a slow boil and keep pot half covered for approximately 40 minutes or until the potatoes are very fork tender the whole way through
7. Add potatoes to a mixer and add 1 tablespoon of butter and 1 tablespoon of brown sugar per potato used and blend to a smooth consistency.
8. For an added touch, you can place the whipped potatoes in an oven safe casserole dish and top with marshmallows and bake at 350 degrees until the marshmallows are slightly melted.
