Tuesday January 9, 2018 - Greek Omelet, The Tom and Joe's Way
Ingredients:
2 Large Eggs
6 oz Fresh Baby Spinach
1 oz whole milk
2 oz diced onion
3 oz crumbled feta cheese
1 tsp. butter or margarine
1 Tomato Slice
1/4 tsp. oregano
Directions:
1. Use 1/2 tsp of butter or margarine to saute the diced onions
in a skillet
2. Add the fresh baby spinach and steam with water under a lid to allow the spinach to cook down
3. In a small bowl, mix the 2 eggs and milk with a fork until it is well blended
4. In a separate skillet melt
1/2 tsp of butter or margarine until it starts to sizzle.
5. Pour the scramgled eggs into the skillet and add the
spinach and onion from the other skillet
6. Sprinkle the feta cheese through the egg and cover with a lid
7.
Once the egg is cooked so that there is no runny remaining, fold it over in a trifold configuration
8. Heat both
sides of the tomato slice and place it on top of the omelet
9. Sprinkle the tomato slice with oregano and serve
