Stuffed Cabbage Soup - The great taste of stuffed cabbage rolls without all the work
 
Ingredients
 
1 Medium Head of Cabbage
1lb Ground Beef
1 cup of rice
2 cans tomato puree
Water
Salt & Pepper
 
Directions
 
1.  Brown the ground beef in a skillet.  Chop it up finely while browning.  Drain grease and set aside
2.  In a large stock pot, add the tomato puree.  For each can of tomato puree, add 2 cans of water
3.  Cut the cabbage into cubes (approximately 2" x 2" cubes) and add it to the stock pot
4.  Add the browned ground beef
5.  Bring to a medium-to-low boil and maintain for approximately 1 hour to allow the cabbage to separate and become tender.
6.  Once the cabbage is soft and tender, add the uncooked rice and allow the soup to simmer for another 20 minutes to allow the rice to cook
7.  Add salt and pepper to taste.
